2 cup dark red kidney beans, drained, rinsed
1 cups tomatoes,
1 cup chopped green capsicum
1 cup chopped red capsicum
1/4 cup sliced green onions (optional)
1/4 cup chopped fresh cilantro
Dressing
3 tbls cider vinegar
2tblsp canola oil
1 tsp chili powder
1/2 teaspoon salt
1/2 tsp dried origano
How to make Mexican Salad
METHOD:
In large bowl, mix salad ingredients. In another bowl, mix dressing ingredients with whisk until blended well.
Pour dressing over salad; toss to mix. Cover and refrigerate at least an hour to blend flavors.
