• Chicken fillets 4 cut into cubesFor the rice:
• 2cups rice
• 2 Tablespoons butter
• Salt to taste
• Lime juice 1
• Chopped cilantro or green coriander 1 cup
• 1 cup red beans boiled till tender and water removed.
• Chili powder 1 tablespoon
• Cumin powder 1 teaspoon
• Oregano 1 tablespoon
• Cayenne pepper 1 tablespoon
• Onions chopped 1
• Onion powder 1 teaspoon
• Garlic powder 1 teaspoon
• Tomatoes chopped 4
• Cilantro chopped 1/2 cup
• Lemon juice 1 cup
• Green pepper one deseeded and chopped finely
• Mozarella or cheddar cheese grated 1 cup
• Cucumber 1 chopped, deseeded
• Butter 2 tablespoons flat
• Boiled corn or canned corn 1 cup
• 1 cup sour cream beaten [optional]
How to make Mexican Burritto Bowl
METHOD:
1. First take chopped onions, tomatoes, green pepper, cucumber, cilantro and mix in a bowl. Add lemon juice and a pinch of salt and chili powder. This is a good tasting salsa.
2. Mix well and place in fridge.
3. Boil the rice and when done, mix with butter, lime juice, cilantro and let stand.
4. Take chicken cubes cut in small sizes and add chili powder, cumin powder, oregano, onion powder and garlic powder. Cook in a non stick pan with a tablespoon of sunflower oil till tender and roasted.
5. Boil the red beans in lot of water and when tender add chili powder, oregano and cayenne pepper with a pinch of salt and mix.
6. Now take a bowl.
7. Place a layer of rice, then place chicken on top.
8. Next layer red beans.
9. Now top with corn.
10. Now add salsa and layer on top.
11. Then sprinkle cheese all over.
12. Now layer with sour cream.[This is optional.
13. Lastly top with shredded lettuce.
14. You may use with tortillas [Mexican chips, Guacamole sauce made from avocadoes and available in superstores]
15. It is a very delicious unique fine meal.
Hello, this recipe looks difficult but it is very easy to make. You can eat it as a side salad with the whole family or even full meal. I made this for breakfast as side salad and everyone in my house loved it especially ME!
