- Mutton Chops: 12 pcs
- Mutton Kidneys: 10-12 pcs
- Whole Garlic Cloves: 8-10 pcs
- Whole Tomatoes: 4 pcs
- Whole Onion: 2 pcs
- Red Chili Powder: 1 tbsp
- Ginger Garlic (Chopped): 1 tbsp
- Yogurt: 1/2 Cup
- Dried Fenugreek Leaves (Kasuri Methi): 1/2 tbsp
- Mint Leaves: 1/2 bunch
- All Spice Powder: 1 tsp
- Green Chilies: 6 pcs
- Lemon: 2 pcs
- Oil / Ghee: 1/2 cup
- Salt: as per taste
METHOD:
- Rub whole garlic on goat's kidneys, leave for 20 minutes then wash with fresh tap water.
- Strain the water off and cut the kidneys into small pieces.
- Now cut onions, tomatoes, mint leaves, green chillies and ginger into small pieces.
- Now boil the chops and remove bones off.
- Put the kidneys and chops into a pan on low flame and cover for 5 minutes.
- Once there is enough steam in the pan, remove the cover and mash kidney pieces and chops with a spoon.
- Now add tomatoes, red chillies, onions, chopped ginger garlic and yogurt to the pan cover again for 10 minutes.
- Then add dried fenugreek leaves, mint leaves, all spices (garam masala) and 4 spoons of ghee or oil. Cover the pan again.
- After 5 minutes, add 4 spoon oil, salt, chopped ginger, green chillies, and lemon juice and then mash all ingredients together.
- Mash all ingredients very well.
- Mutton katakat is ready to serve.
- Enjoy with hot tandoori naan.
