• Garlic cloves 2 crushed
• Olive oil 1 tablespoon
• Eggplant or aubergine 1 medium chopped in small cubes
• Onion chopped 2 tablespoons
• Chopped italian tomatoes in tomatoe juice 1 can 500 ml
• Grated Parmesan Cheese 1/2 cup
• 1/4 cup basil leaves
• White kidney beans 1 tin 500 ml boiled or 1 cup soaked overnight and boiled till tender
• Green pesto 2 tablespoons
How to make Italian Baked Eggs
METHOD:
1. Take a fry pan and add olive oil. Fry the onions and aubergine for 5 minutes and till color changes to golden. Now add garlic, pesto, tomatoes, beans and stir on low fire till tender.
2. Now break the eggs on top on four sides and cover .Sunny side up.
3. Put in oven on 200 degrees C for 7 minutes or cook on slow flame for 10 minutes.
4. Serve in cooking bowl with pesto and basil leaves on top.
