1 kg (2 lb) potatoes, scrubbed
6 spring onions, finely chopped
salt and pepper
3 tablespoons Mayonnaise,
3 tablespoons natural yogurt
snipped chives, to garnish
How to make GERMAN POTATO SALAD
METHOD:
Cook unpeeled potatoes in a saucepan of boiling salted water for about 15 minutes until tender.
Drain, then cool a little before removing skins. Cool completely. Dice potatoes and put into a bowl with spring onions, then season with salt and pepper.
Mix mayonnaise and yogurt together in a bowl, then fold into the salad. Spoon into serving dish and serve garnished with chives.
