Ingredients

3 lb. chicken
1 clove garlic
1 green chilli
1 onion
1 oz. creamed coconut
salt to taste
1-inch stick cinnamon
2 quarts (U.S. 10 cups) water
3 oz. ground almonds
½ teaspoon garam masala
½ teaspoon black pepper
1 oz. butter
1 tablespoon gram flour
4 oz. cooked rice
Chilli powder
1 lemon

How to make Curried Chicken Soup

Method

Joint the chicken; crush garlic; mince chilli and slice onion. Simmer the chicken pieces in the coconut, salt, cinnamon and water. When the chicken is very tender take it out of the pan, cool, dice and set aside. Return the bones to the pan and cook till liquid is reduced to about 14 pints (U.S. 3/ cups). Add garlic, chilli, almonds, garam masala and pepper, stir and bring to the boil. Stain through a sieve and keep aside. Now heat the butter in a saucepan and saute the onion till lightly brown, add gram flour and blend. Pour in the stock and cook till thickened. Put diced chicken into individual serving bowls. Pour in the soup and serve sprinkled with chilli powder. Serve with boiled rice and lemon wedges.
