4 oz. plain flour
½ Teaspoon Baking powder
½ Teaspoon vanilla Essence
2 tablespoons desiccated Coconut, soaked in
a little Milk
2 large Bananas
1 egg, whisked with 1 tablespoon Sugar Ghee or Oil for frying

How to make Coconut And Banana Fritters (Mithi Pakori)

METHOD:

Sieve flour and baking powder into a mixing bowl. Add vanilla essence, strained coconut milk and mashed bananas. Mix well. Beat in the whisked egg and sugar. If necessary add water to make a smooth, medium-thick batter. Heat a little ghee or oil in a pan and drop in spoonsful of batter. Cook the fritters till golden on both sides. Serve immediately.
