Ingredients
500g boneless skinless chicken breasts, thinly sliced
1 tbsp peanut oil
3/4 cup shitake mushrooms, thinly sliced
1 can water chestnuts, drained and diced
1 tablespoon minced fresh ginger
1 1/2 cups carrots, shredded
1/2 cup green onions, julienned
12 Boston or Iceberg lettuce leaves
1/3 cup peanuts, chopped
1 bunch coriander leaves, roughly chopped

Dressing
2 tbsp rice vinegar
1 1/2 tsp peanut oil
2 tbsp teriyaki sauce
1 tbsp soy sauce
1/2 tbsp garlic powder
1/4 tbsp crushed red pepper flakes
How to make Chicken Lettuce Wraps

METHOD:

In a non stick wok, stir fry chicken with peanut oil, cook for 3-5 minutes; drain. Add mushroom, water chestnuts and ginger, and cook for an additional 5 minutes. Drain and keep aside.

In a small bowl, mix vinegar, teriyaki sauce, soy sauce, garlic powder, red pepper flakes and peanut oil.

Mix carrots, onions, chicken mixture, coriander, peanuts and dressing.

Spoon into lettuce and serve.
