گاجر اور کینوں کا سوپ

گاجر۔۔۔۔ آدھا کلو
آلو۔۔۔۔ دو عدد درمیانے
نمک۔۔۔۔ ھسب ذائقہ
پیاز۔۔۔دو عدد درمیانی
کینوں کا رس۔۔ ایک پیالی
کینوں کے چھلکے۔۔۔۔دو کھانے کے چمچ
پارسلے۔۔۔ دو کھانے کے چمچ
ماجیرین یا مکھن۔۔۔ ایک کھانےکا چمچ
کوکنگ آئل۔۔۔۔دو کھانے کے چمچ

ترکیب:

گاجرون اور آلوں کو دھوں کر چھیل لیں اور کش کر کے رکھ لیں پیاز کو باریک چوپ کر کے رکھ لیں۔ پین میں کوکنگ آئل ماجرین یا مکھن ڈال کر ایک سے دو منٹ گرم کریں اور اس میں پیاز کو ہلکا سا نرم ہونے تک فرائی کریں۔ پھر اس پر نمک چھڑک کر کش کئے ہوئے گاجروں اور آلوں کو شامل کریں۔ تین سے چار منٹ فرائی کر کے اس میں تین پیالی پانی ڈال دیں۔ ڈھک کر ہلکی آنچ پر دس سے بارہ منٹ تک پکائیں۔ پھر کینوں کے چھلکے اور رس شامل کر دیں۔ دو سے تین منٹ پکاکر چولہے سے اتارلیں۔ ہلکا سا ٹھنڈا ہونے پر بلینڈر کر لیں، اور دوبارہ سے پین میں ڈال کر ابال لیں۔ چیک کر کے چاہیں تو حسب پسن پانی، کالی مرچ، نمک شمل کر دیں اور ابال آنے تک چولہے سے اتار لیں۔
