1 whole chicken preferably 1kg
4tbs oil
2tbsp of mixed dried herbs.
(Rosemary , oregano , thyme and basil)
Juice of 2 lemons
8 cloves of garlic minced finely.
1tbsp of red Chilli flakes
Salt and crushed black Pepper to taste
1 lemon, for garnish
How to make Butterflied Roasted Chicken

METHOD:

1.Use kitchen scissor or knife to cut out the backbone of the chicken.
2.Lay your chicken open like a book on your work surface, skin-side up. Flatten the chicken with your hands with firm pressure. This process is called butterflying the chicken.
3.Sprinkle the chicken with the mixed herbs , red chilli flakes , lemon juice , apply minced garlic , crushed black pepper and salt . (Marinate for at least 2 hours with maximum for overnight)
4.Preheat oven at 350 C.
5.Heat a 12-inch frying pan or grill pan over medium-high heat. Once hot, add oil to heat. Add the chicken, skin-side down, and fry until golden brown, about 5 minutes.
6. Transfer chicken to baking dish with skin side upwards and Roast the chicken about 1 hour 10 minutes. Placing the baking dish in middle of the oven.
7.Serve with French fries , peri peri sauce or thousand island dressing.
