4 Brinjal
1 onion
2 green chillis
1 clove garlic
1-inch fresh root ginger
1 sprig fresh mint oil for frying
1 lb. minced beef
1 thick slice white bread, soaked in water
seasoning

Egg yolk
Breadcrumbs
How to make Brinjal Cutlets
Method
Boil the Brinjal in water until nearly cooked (about 15-20 minutes). Drain, cool and cut in half lengthwise. Scoop out pulp and set aside in a bowl. Finely mince the onion, chillis, garlic, ginger and mint leaves. Fry in a little oil for at least five minut¬es. Add the meat and seasoning then cook till meat is done. Add the meat mixture along with the soaked bread to the Brinjal pulp, mix well and stuff into Brinjal skins. Brush with beaten egg yolk and top with breadcrumbs. Either fry or grill until golden brown.
