Cheese whiz is actually a processed cheese sauce, which has the quality of being soft at room temperature. It is a bright, yellow (coloring agent Annato), viscous liquid, used in many recipes as a dip or a topping. It does not come under the melt able cheese category. While making cheese whiz, milk protein concentrate is used to eliminate some of the inherent problems of cheese solids.the regular cheese is reprocessed by adding emulsifiers and stabilizers such as xanthan gum. Citric acid and flavoring agents are also added to impart tanginess and the flavor.
