Grind 1 onion, green coriander and almonds or cashews
finely.

Add ground onion spice, black pepper powder, white pepper
powder and salt to the mincemeat. Now soak bread in water and wring
out the water. Add to the mince and mix well.

Make small seekh kababs with mince mixture.
|
|
Now place kababs in a wide pan, burn a coal and place on kababs (on a peel of
onion). Put 2 tbsp cooking oil on the coal and cover the pan
for 5 to 7 minutes.

Remove coal after 5 minutes, cook kababs on medium flame for 3 to 4 minutes and
remove in a plate.

Slightly fry ginger and garlic in cooking oil in a wok pan.
|

Add chopped tomatoes and onions and mix well.
|
|
Add salt, red pepper powder, all spice powder, a pinch of yellow food coloring
and fry well.
|
|
Once tomatoes are tenderized, place kababs on them.
|
|
Sprinkle thinly chopped green chillies, green coriander and julienne ginger.
Cook on steam on low heat with pan covered.

Preparing Chicken Tikka
Ingredients:
- Mincemeat: 1/2 kg
- Salt: as per taste
- Ground Ginger, Garlic: 1 tbsp
- Onion: 2 pcs
- Almonds or Cashews: 2 tbsp (chopped)
- Black Pepper Powder: 1/2 tsp
- White Pepper Powder: 1 tsp
- All Spice Powder: 1 tsp
- White Cumin: 1 tsp
- Ginger (Thinly Sliced): 1 tbsp
- Bread Slice: 1 no.
- Green Chillies: 3 to 4 pcs
- Green Coriander: 2 tbsp

Method |
- Soak bread slice in water and squeeze well to remove the excess water.
- Grind black pepper, white pepper, onion, green coriander and almond
together finely.
- Add ground mixture to the minced meat and mix well.
- Make small seekh kabab and place in a wide karahi pan.
- Place a burnt coal among kababs. Pour 2 tablespoons of cooking oil and
cover the pan.
- Remove coal after 5 to 7 minutes and cook kababs for 3 to 4 minutes on
medium flame (keep reverting).
Preparing Karahi Masala:
- To make masala, add 4 tablespoons of cooking oil in a pan.
- Add 1 tsp ginger and garlic and fry slightly.
- Chop 4 tomatoes and 1 onion finely and add to the pan.
- Then add salt, red pepper powder, ground all spice powder and one pinch of
yellow food coloring. Fry.
- Once tomatoes are soft and tender, place cooked seekh kababs over them.
- Put thinly chopped green chillies, green coriander, and ginger.
- Cook on low flame.
- Once oil appears separately, remove from the stove.
- Delicious reshmi kabab karahi is ready.
