Heat a saucepan, add cardamom pods and roast well.
Once it leaves aroma, add semolina.

How to Make Suji Ki Katlian (Suji Halwa)


Ingredients:

  • Semolina: 1/2 kg
  • Sugar: 1/2 kg
  • Crushed Coconut: 1 cup
  • Water: 1 cup
  • Green Cardamom: 3-4 (remove peel and grind pods)
  • Ghee: 1 cup


Garnishing Ingredients:

  • Almonds: as required (chop finely)
  • Pistachios: as required (chop finely)

 

Method

  1. Heat a pan, add cardamom pods and roast until it starts giving aroma.
  2. Then add semolina, mix well and roast for 2 minutes.
  3. Once semolina is heated, add ghee and mix well on low heat until you smell semolina aroma. Remove in a dish.
  4. Now add crushed coconut to a saucepan, immediately add the ghee and mix well.
  5. Roast it until it gives aroma, keep stirring spoon continuously otherwise it will burn.
  6. Also remove roasted coconut in semolina bowl and mix well.
  7. Mix water and sugar in a pan cook for 10 to 12 minutes; make a thick solution.
  8. Add semolina and coconut mixture, roast well quickly and remove the pan from stove.

 

Presentation:

  • Grease tray beforehand with 2 tbsp ghee, put semolina and spread across the tray.
  • Hot semolina becomes hard to spread with hands therefore grease rolling pin with ghee and spread semolina.
  • Make cuts with knife, garnish with pistachios and almonds.
  • Cool it at room temperature and remove pieces in a plate.
  • Tasty sooji halwa pieces are ready.
  • Serve and enjoy.

NOTE:

  • In order to check sugar solution, pick a drop using thumb and index finger, if you find it sticky, solution is ready.
  • While roasting semolina and coconut, keep stirring ladle otherwise it will be burnt.

  • When you add roasted semolina to sugar solution, mix it and immediately move to the tray otherwise it couldn't be transformed into katlian (pieces) and it will start solidifying inside the saucepan.
  • It is advised to grease tray, rolling pin and cutting knife with ghee prior, spread semolina in tray and make katlian instantly.
