Mumbai Biryani Recipe in Urdu

Today we are going to figure out how to make bombay biryani recipe. I have presented recipe of Bombay biryani in Urdu with pictures and step by step instructions. Recipe of this biryani is very popular in the whole sub continent - Pakistani, India, Bangladesh and Nepal. The main difference in this biryani is the absence of onions which are generally used as a key ingredient in most of the biryani recipes. The reason for not using onions is to keep biryani moistureless as usage of onions makes biryani wet. This trick was used to generate the taste of biryani anew, different from ordinary biryanis. Also potatoes are not included in the main recipe however we have used it just for taste. Additionally, it uses additional ingredients such as plums etc.

Though, it's ready-made spices such as Shan Bombay biryani masala are available in market but I made each and everything myself and that is the key to get the desired taste.

Roast salt, red chilies, black cumin, coriander powder and all spice powder

Beat yogurt well and mix

Place for steam cooking (dam). When oil comes up, masala is ready

Boil rice. When one kanni remains, put them in strainer

Make rice layer in an open saucepan

Slice lemons and tomatoes in round shape and make a layer

Spread boiled rice

Add biryani essence

Add yellow food coloring to milk and pour on rice. Then steam cook (dam).

When rice are fully cooked, biryani is ready.

Method of Making Bombay Biryani


  • Chicken: 1 kg
  • Rice: 1 kg
  • Tomatoes: 4 pcs
  • Lemons: 4 pcs
  • Ginger Garlic: 2 tablespoons
  • Green Chilies: 6 pcs
  • Mint Leaves: 1 cup
  • Cloves: 6 pcs
  • Green Cardamom: 6 pcs
  • Black Pepper: 8 peppercorns
  • Plums: 15 pcs
  • Salt: as per taste
  • Red Pepper: 1 tbsp
  • Coriander Powder: 1 tbsp
  • Black Cumin: 1 tbsp
  • Yogurt: 1 cup
  • Yellow Food Coloring: small amount/as you like
  • Milk: 1/4 cup
  • Biryani Essence: 1 tsp



  1. Add plums, ginger garlic paste to chicken and fry in oil until it turns brown. Then add salt, red chili, coriander powder, whole all spice powder and roast well. Then beat yogurt well. Spices are ready.
  2. Add salt to rice and boil, then place a layer of boiled rice in the pan, then make layer of spice, then layer of lemons and tomatoes and then spread rest of the rice.
  3. Add biryani essence, then add milk with yellow food coloring and pour on the rice. Place for dam (steam cook).
  4. When rice are cooked fully, Mumbai biryani is ready.
