How to Make Keema Bharay Karelay


  • Bitter Gourds: 1 kg
  • Mincemeat: 1 kg

Filling Ingredients:

  • Bitter Gourd: 1 kg
  • Mincemeat: 1/4 kg
  • Salt: as much required
  • Green Coriander: 1 tbsp
  • Crushed Red Chillies: 1/2 tsp
  • All Spice Powder: 1/4 tsp
  • Whole Cumin Seeds: 1/2 tsp
  • Whole Coriander: 1/2 tsp
  • Thread: for tying
  • Oil: for deep frying


  1. Clean bitter gourd from inside and remove seeds. Apply turmeric and salt and keep aside for minimum 1 hour.
  2. Then squeeze it vigorously to eliminate its bitterness.
  3. Then add all ingredients to mincemeat and mix well.
  4. Fill mincemeat mixture into bitter gourds and tie tightly with thread so that it may not be let out.
  5. Prepare all bitter gourds similarly and deep fry in heated oil at low flame.
  6. Once minced meat is cooked and tenderized thoroughly, remove from stove.

  • Minced Meat: 3/4 kg
  • Onions: 2 medium
  • Tomatoes: 3 large
  • Ginger Garlic Paste: 1-1/2 tbsp
  • Coriander Powder: 1 tsp
  • Crushed Red Chillies: 1 tsp
  • Cumin Powder: 1 tsp
  • Water: as required
  • Salt: as required
  • Turmeric Powder: 1/2 tsp
  • Whole Cumin: 1 tsp
  • Whole Coriander: 1 tbsp
  • Green Coriander: 2 tbsp
  • All-Spice Powder: 1 tbsp
  • Green Chillies: 4-5 pcs
  • Oil: 3-4 tbsp


  1. Heat oil and fry onions to brown.
  2. Add ginger garlic paste and mix well.
  3. Now add minced meat and mix well together.
  4. Once mince meat changes its color, add all spices and mix thoroughly.
  5. Add tomatoes and cook until soft.
  6. When soft, add water enough to tenderize the mincemeat.
  7. Once tomatoes are tender, water is dried out and oil layer appears, add fried bitter gourds.
  8. Mix well.
  9. Add green coriander, green chillies, all-spice powder and mix well.
  10. Place on stove for steam-cook (dam) for 8 - 10 minutes on low flame.
  11. Delicious Keema Bharay Karelay are ready to serve.
