Matar ka Pulao is a very light dish and very less amount of spices is used in it. It mostly has the flavor of whole spices like black pepper, cardamoms. Green peas are fried and cooked and then rice are added in peas and cooked. Matar Pulao Recipe is served with raita and salad in lunch and dinner as a full course meal. مٹر کا پلاؤ

اجزاء:
چاول ------------- آدھا کلو
بڑی الائچی ------------ تین عدد
مٹر ------------ ایک کلو
سیاہ مرچ ----------- چھ عدد
گھی ----------- آدھا پاؤ
دار چینی -------------ایک بڑا ٹکڑا
پیاز ---------- آدھا پاؤ
لونگ ------------- چھ عدد
ادرک -----------آدھا چھٹانک
نمک ------- حسب پسند


Matar ka pulao banane ka tarika



ترکیب:
دیگچی میں گھی گرم کرکے اس میں پیاز کاٹ کر ڈال دیں۔ جب پیاز کا رنگ بادامی ہو جائے تو ادرک باریک کاٹ کر یا پیس کر ڈال دیں۔ تھوڑی دیر بعد لونگ، سیاہ مرچ، دار چینی اور بڑی الائچی ثابت ڈال دیں۔ دومنٹ بعد مٹر کے دانے ڈال کر تھوڑی دیر بھونیں اور اس قدر پانی ڈالیں کہ جس میں مٹر بھی گل جائیں اور تقریباً ایک کلو کے قریب پانی باقی رہ جائے۔ جب مٹر تین حصے گل جائیں تو چاول نچوڑ کر ان میں ڈال دیں۔ پانی کا اندازہ انگلی کے پوٹے سے کر سکتی ہیں۔ جب چاول ابلنے لگیں تو تھوڑی تھوڑی دیرکے بعد چمچ سے ہلاتی رہیں۔ چاولوں میں ایک کنی رہ جائے اور پانی خشک ہو جائے تو دم پر لگا کر ہلکی آنچ پر رکھ دیں۔ دم لگانے سے پہلے تھوڑا سا سیاہ زیرہ بھی چھڑک دیں تو بہتر ہے۔ اس طرح خوشبو بہت اچھی ہو جائے گی۔

Daar chini 1 bara tukra
Piyaz adha pao
Long 6 adad

Banane ki tarkeeb


Degchi main ghe garam kar k is main piyaz kaat kar daal dain. Jab piyaz ka rang badami hojaye to adrak bareek kaat kar pees kar daal dain. Thori dair baad baad long, siyah mirch, daar cheeni aur bari ilaaichi sabit daal dain. 2 minute baad muter k danay daal kar thori dair bhonain aur is qadar paani daalin k jis main mutter bhi gal jaian aur taqreeban 1 kg k kareeb pani reh jaye. Jab mutter 3 hissay reh jain to chawal nichor kar in main daal dain. Paani ka andaza ungli k potay sy kar sakti hain. Jab chawal ubalny lagain to thori thori dair k baad chamch sy hilati rahain. Chawalon main ek kanni reh jaye aur pani khushk hojaye to dam per laga kar halki anch per rakh dain. Dam lagany sy pehly thora sa zeera bhi chhirak dain to behtar hai is sy khushbo bauhat achi ajay gi.

This is an amazing matar ka pulao. I generally add about 1/2 tsp of garam masala to the garlic powder paste for just a bit more flavor. Also instead of plain water I use chicken broth or stock cube dissolved in water, My matar ka pulao really was amazing.
