The mystery behind its name 'tandoori' is the clay oven (tandoor) which is used to prepare roasted chicken recipes.


How Tandoori Chicken Recipe is Made?

Chicken is first marinated with yogurt and tandoori chicken masala which include red pepper, all-spice, cumin, ginger garlic and lemon juice. It's fiery red tone is achieved by using common red pepper and sometimes Kashmiri red chilli. Turmeric powder is also used to darken the color as it turns chicken appear orange in color. After seasoning the chicken, it is threaded on the skewer and roasted in clay oven called 'Tandoor'. Oven is heated with coal and sometimes by burning wood which infuses the charcoal flavor to the chicken. Tandoori chicken is always cooked at high temperature as to get it's exact taste.

Ingredients

  • Chicken: 500 grams
  • Yogurt: 125 grams
  • Lemon: 1 no.
  • Red Pepper Powder: 1 tbsp
  • All Spice Powder: 1 tbsp
  • Cumin Powder: 1 tsp
  • G/Garlic Paste: 1 tbsp
  • Turmeric Powder: 1/2 tsp
  • Salt: as per taste
  • Oil: as required


Method

  • Mix chicken leg piece, salt, turmeric powder, red pepper powder, cumin powder, yogurt, lemon juice, ginger garlic paste, oil and all-spice powder and mix well until chicken is marinated thoroughly.
  • Now place marinated chicken in oven tray, add half cup water and bake until cooked.
  • Once chicken is golden brown in color, remove from oven and grill for some minutes to give it a smoky flavor.
  • Tandoori chicken is ready to serve. Enjoy hot with condiments.

Thank you very much for this recipe! I marinaded it for 24 hours, scraped off all the marinade, and then cooked in my Romertopf clay pot for about 45 minutes at 480deg. The chicken came out perfect. I almost didn't add the food colouring, but I'm glad I did because the finished product looked exactly like what it looks like in restaurants. My husband declared it a success.
