3 smoked chicken breasts (fillets), skinned and boned
1 star fruit (carambola), sliced and pips removed
1 papaya, peeled, seeded and sliced
2 fresh figs, quartered
½ mango, peeled and diced
1 tablespoon chopped stem ginger, to garnish
MANGO DRESSING:
½ mango, peeled
60 ml sunflower oil
1 tablespoon sherry vinegar
Pinch mixed spice

METHOD:
