500 grams small brinjals
2 tblsps sesame or til seeds 1 tblsp coriander seeds
half a coconut (dry)
1 tblsp cumin seeds
250 grams onions
a small hall of tamarind (of the size of a lemon)
25 grated
25 grams each of almonds,
cashpwnuts and roasted peanuts
6 flakes gartie
1 piece ginger
2 red and
4 green chillis
a handful of coriander leaves
1/2 tsp turmeric powder
12 tsp garam masala
salt to taste
6 tbsps ghee
Silver or gold foil
How to make Nutty Brinjals
METHOD:
Slit each brinjal into four, but only half-way through. Roast together the sesame, coriander seeds, coconut and half the cumin. Roast the whole onions over the fire till the peel turns black. Now soak the tamarind in a cup of hot water for 15 minutes arid then squeeze out the pulp. Dissolve the jaggery into the tamarind water. Grind the nuts together with the roasted coconut and spices, garlic, ginger, chillies and coriander leaves. Mix in the turmeric, garam rnasala and salt. Stuff this paste well into each brinjal. Heat the ghee, add the rest of the cumin seeds and when they stop popping, place the brinjals carefully in the vessel and fry till they start changing colour. Sprinkle in the tamarind water and cook till the brinjals .are tender and completely dry. Cover with silver or gold foil and serve at once.
