375 g (12 oz) white or light green cabbage, finely shredded
440 g (14 oz) can pineapple slices or 375 g (12 oz) fresh pineapple, chopped
½ eating apples
2 teaspoons lemon juice
90 g (3 oz/ ½ cup) raisins
60 g (2 oz/ 1/3 cup) salted peanuts
½ apple, sliced, or pineapple leaves to garnish
DRESSING:
1 quantity Mayonnaise
1 teaspoon clear honey
3 tablespoons pineapple or apple juice
salt and pepper
How to make FRUITY COLESLAW
METHOD:
Put cabbage into a large bowl. If using canned pineapple, drain well, reserving the juice, and chop the fruit. Add pineapple to cabbage.
Core and chop apples, toss in lemon juice and add to salad with raisins and peanuts.
To make the dressing, mix all the ingredients in a bowl, using reserved pineapple juice or apple juice, then pour over the salad. Mix well, then turn into a serving dish. Garnish and serve at once.
