1 ½ lb. beef, cut into slices
1-inch fresh ginger
2 cloves garlic
1 tablespoon ground coriander seeds
1 teaspoon ground poppy seeds
2 teaspoons ground cummin seeds
¼ teaspoon white pepper
2 cartons yoghurt
Salt to taste
4 spring onions oil for frying
1 piece cinnamon
2 cardamom seeds
¼ -inch slice creamed coconut
1 tablespoon ground almonds ••••
Water to mix
3 red chillis, deseeded
Lemon juice 4/1

How to make Curried Beef and Yoghurt (Beef Summa)
METHOD:
Trim the meat. Mince the ginger, crush the garlic and combine with the ground coriander, poppy, cummin, pepper, yoghurt and salt. Mix with the meat and set aside for five minutes. Finely slice the spring onions and fry in a little oil until slightly brown. Add the cinnamon and cardamoms and fry for one minute before adding the meat. Cook cover¬ed for five minutes then remove the lid and cook gently until the meat is nearly done. Mix the coco¬nut and ground almonds with a little water and add to the meat. Simmer for at least another 10 minutes or until the meat is tender. Remove from the heat and add the red chillis and lemon juice to taste. Garnish with rings of onion and green pepper. Serve sauce separately with plain boiled rice or chappatis as an accompaniment.
