Ingredients

Few Batavia leaves
Few lollo rosso leaves
60 g lamb’s Lettuce
60 ml extra virgin olive Oil
2 large slIces calves, weighing 250 g, cut into ribbons
1 tablespoon shredded fresh Sage leaves
2 tablespoons balsamico Vinegar
Salt and pepper
Pine nuts, to garnish

How to make Calves Liver Balsamico

METHOD:

Tear salad leaves into smaller pieces and arrange on 4 plates.
Heat oil in a frying pan, add liver and sage and cool for 2-3 minutes, stirring constantly. Remove with a slotted spoon and divide between the plates.
Pour vinegar into pan, season with salt and pepper and warm through. Spoon over the salads and serve garnished with pine nuts.
