1 onion, chopped
1 garlic clove, crushed
1 tbsp butter
1 cup sausages, sliced
½ cup chicken stock
½ cup tomatoes, chopped
1 capsicum, chopped
1 bay leaf
¼ tsp dried thyme
1 dash cayenne pepper
¼ cup rice
1/2 cup cubed cooked chicken
½ cup prawns
How to make Cajun Jambalaya
METHOD:
Saute onion and garlic in butter until tender.
Add the sausages, stock, tomatoes, capsicum, bay leaf, thyme and cayenne.
Bring to a boil, add rice. Reduce heat; cover and simmer.
Add chicken and prawns; cook 5-10 minutes longer or until prawns turn pink and rice is tender. Discard bay leaf before serving.
