1. Lauki or podiney ka raita:

1 cup grated bottle gourd (lauki)
1 cup low fat curds (dahi), beaten
4 tbsp chopped mint leaves (podina)
1/4 tsp roasted cumin seeds (zeera)
1/4 tsp black salt (kala namak)
1/2 tsp sugar (cheeni)

Steam the bottle gourd for 4 to 5 minutes. Allow to cool completely.
Combine all the ingredients in a serving bowl and whisk well.
Serve chilled. You can have it with rice also.

2. Bajra, moong or matar ki khichri:

1/4 cup bajra (black millet) , soaked for 5 hours and drained
1/4 cup moong (whole green gram)
1/2 cup green peas
2 tsp oil
1 tsp cumin seeds (zeera)
1/2 cup finely chopped onions
1 cup chopped tomatoes
1 tsp garlic (lehsan) paste
1/2 tsp ginger (adrak) paste
1/2 tsp green chilli paste
1/2 tsp turmeric powder (haldi)
1 tsp chilli powder
salt to taste

Soak the bajra and moong separately in enough water in a deep bowl for 5 hours and drain well.
Combine the bajra, moong, green peas, salt and 1 cup of water in a pressure cooker, mix well and pressure cook for 5 whistles.
Allow the steam to escape before opening the lid. Keep aside.
Heat the oil in a deep non-stick pan and add the cumin seeds.
When the seeds crackle, add and the asafoetida onions and sauté on a medium flame for 1 minute.
Add the tomatoes, garlic paste, ginger paste, green chilli paste, turmeric powder, chilli powder and salt, mix well and cook on a medium flame for 2 to 3 minutes, mash using a potato masher, white stirring occasionally.
Add the cooked bajra-moong dal- green pea mixture and ¼ cup of water mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally. Serve hot.

3. Pulled chicken burger:

Chicken --- 1 cup boiled and shredded in big threads
Barbecue sauce --- 3 tbsp
Oil --- 1 tsp
Salt --- to taste
Black pepper --- to taste
Vinegar --- 1 tbsp
Burger buns --- 2

Heat oil in a pan and add all the ingredients and toss well.
Cut the burgers into halves.
Put the chicken on the lower part of the bun and cover with the upper part.
Pulled chicken burger is ready.
Serve it with hot sauce.
