How to Prepare Coxinha Croquettes
Coxihna
(A popular food in Brazil)
Ingredients
Chicken = 1 breast
Onion = 1 tbsp finely chopped
Garlic = 2 cloves ( chopped)
Vinegar = half tsp
Soy sauce = half tsp
Red chilli powder = 1 tsp
Salt = to taste
Green chillies = 2 chopped
Coriander leaves = 2 tbpsn finely chopped
Water= 3 cups
All purpose flour (maida) = 1 cup
Chicken broth = 2 cup.
cheese = 1 bowl ( mixture of cheddar, mozzarella and cottage cheese)
Egg = 1
Breadcrumbs = as required
Oil = for frying
Method
1. In deep pan add 3 cups of water then chicken , onion , garlic and salt.
2. Cook it for 25 mins.
3. Separate the chicken breast and the broth.
4. Cool it and shred the chicken breast and reserve
5. Drain the broth and reserve.
6. Also reserve the boiled onion and garlic.
7. Make paste of boiled Onion and garlic then we will use it in filling.
For the Filling
1. In a medium pot, add oil and garlic onion paste until turns to brown.
2. Add boiled shred Chicken in the pot also add red chili powder, vinegar, soy sauce.
3. And cook it for 5 mins.
4. After that 1 small bowl of 3 types cheese ( mixture of cheddar, mozzarella and cottage cheese).
5. Then turn off the flame.
For Coxinha Dough
1. In deep pan heat reserve broth that we already made in step 1.
2. When Broth starts boiling add all-purpose flour and mix continuously
3. Mix it until it form a big ball.
4. Transfer to a bowl and leave it to cool.
For Coxihna shape
1. To form a small coxihna we are going to get a little piece of the dough and form a ball the size of a ping pong ball.
2. Then, flatten the ball, creating a disc and then hollowing out the middle for the filling.
3. Place a tablespoon of the filling in the middle of disc.
4. Then press the dough closed around the filling, shaping it as a teardrop.
5. Repeat the same process and make remaining coxihna.
6. Dip coxihna in beaten egg.
7. Roll it in breadcrumbs
8. Deep fry it until turns to brown.
9. Super delicious coxihna is ready to serve.
