Ingredients

Spinach tagliatelle 250 g
Plain tagliatelle 250 g
Zucchini 2
Cut into matchsticks
Red pepper, sliced 1
Green pepper 1
Green beans 220 g

Tomato and basil Dressing:
Tomatoes, peeled and
Roughly chopped
Garlic 1 clove
Olive oil 2 tbsp
Red wine vinegar 2 tbsp
Finely chopped fresh basil 2 tbsp
Parsley 1 tbsp
Fresh chives 1 tbsp
Black pepper

How to make Tagliatelle Salad

METHOD:

• Cook both tagliatelles in boiling water in a large saucepan following packet direction. Rinse under cold running water, drain and set aside to cool completely
• Place cold both tagliatelles, zucchini, red and green pepper and beans in large salad bowl
• To make dressing, place tomatoes garlic oil and vinegar in a food processor or blender and process until smooth stir in basil, parsley and shives and season to taste with black pepper. Spoon dressing over pasta and vegetables. Toss lightly to coat all ingredients with dressing
