100 grams mushrooms
500 grams peas (shelled)
250 grams onions
1 piece ginger
100 grams oil or ghee
50 grams cashewnuts (pounded)
25 grams almonds (blanched and ground)
a few tsp milk
1 tsp garam masala
1 tsp cumin seeds (pounded)
salt and chilli powder to test
100 grams cream
a few sprigs coriander leases (chopped)
How to make Nawabi Gucchi
METHOD:
Grind the onions and ginger to a paste. Heat the ghee and fry the nuts and onion paste to a rich golden colour, sprinkling a little milk now and then to prevent it from burning. Add the garam masala, cumin, salt and chilli powder. along with the mushrooms and peas. Now add a cup of water and cook till the vegetables are almost done. Mix in the cream. Remove from fire when the vegetables are cook¬ed and the gravy thick. Serve hot, garnished with fresh coriander leaves.
