½ cos lettuce, chopped
a few young spinach leaves, shredded
3 tomatoes, cut into wedges
½ cucumber, halved lengthwise and sliced
½ Spanish onion, cut into rings
1 green pepper (capsicum), seeded and sliced
185 g (6 oz) feta cheese, cubed
12 black olives
1 teaspoon chopped fresh oregano
LEMON DRESSING:
60 ml (2 fl oz/ ¼ cup) extra virgin olive oil
1 tablespoon lemon juice
salt and pepper
METHOD:
Put lettuce, spinach, tomatoes, cucumber, onion and pepper (capsicum) into a bowl. Top with cheese and olives; sprinkle with oregano.
Mix dressing ingredients. Spoon over the salad and serve.
