آم کا میٹھا اچار

اجزاء:
کچے آم ----- ڈیڑھ کلو
چینی کا شربت ------ ایک کلو گرام (بہت گاڑھا)
رائی ------ پچاس گرام (موٹی پسی ہوئی)
سرسوں کا تیل ----- ایک پاؤ
میتھرے ------ پچاس گرام (پسے ہوئے)
نمک ----- حسب ذائقہ
ثابت سیاہ مرچ ------ پچیس گرام
ہلدی ------ پچیس گرام (پسی ہوئی)
ثابت سفید زیرہ ------ پچیس گرام
لیموں ------ ایک عدد

ترکیب:

سب سے پہلے آموں کو اچھی طرح سے دھو کر لمبائی کے رخ پر کاٹ لیں- اس کی گٹھلیوں کو پھینک دیں- آم ٹکڑوں کو نمک اور رائی کے ساتھ ملا کر اسے پانی میں دو تین تک رکھیں- اور پھر ان کو نکال کر کپڑے سے صاف کرلیں - ایک کلو گرام چینی میں پاؤ بھر پانی اور ایک لیموں کا رس ملا کر گرم کر لیں- اس طرح گاڑھا شربت تیار ہوجائے گا- آم کے ٹکڑوں کو اس شربت میں چوبیس گھنٹے تک کے لیے رکھ دیں اور باقی تمام مصالحہ جات بھی ڈال دیں- سرسوں کے تیل کو گرم کر کے ٹھنڈا کرلیں اور سب سے آخر میں تیل بھی ڈال دیں- آم کا نہایت ہی مزیدار اور میٹھا اچار تیار ہوگا- مزے مزے سے تناول فرمائیں-
