185 Mozzarella cheese, sliced
1 small purple onion, thinly sliced
Salt and pepper
60 ml extra virgin olive oil
1 tablespoon fresh basil leaves
1 tablespoon pine nuts

METHOD:
Slice the tomatoes and arrange with slices of cheese, on 4 plates. Arrange onion rings on top. Season with salt and pepper, then drizzle oil over the top.
