90 grams mutton (cut into serving portions)
4 tsp saffron strands
tblsp milk
25 grams ghee
tblsp each of garam masala, coriander powder and powdered cumin seeds
12 tsp pepper powder
tsp dry ginger powder
1 tblsp chilli powder
3/4 tsp turmeric powder
a large pinch each of nutmeg and mace
250 grams tomatoes (blanched and sliced)
50 grams onions
salt to taste
silver or gold foil
a few sprigs coriander leaves
METHOD:
soak the saffron in a tblsp of hot milk for 5 minutes and then crush to a paste. Heat the ghee and fry the mutton ) a rich red color on all sides. Add all the spices, and the tomatoes, onions and salt. Cook till the ghee floats over to the top. Cover with hot water and cook till the union is tender and quite dry. Remove from fire, sprinkle saffron on top and garnish with silver foil and coriander eaves.
