Arabic Chicken Biryani
For the preparation of Arabic Chicken Biryani Recipe, rice is boiled separately in chicken stock. Boiled chicken is fried and cooked with ginger garlic paste, onions, spices are added namely black pepper, ground cumin, ground coriander, turmeric powder, ground cardamom ground cinnamon. Yoghurt is added mixed with garlic cloves in this chicken. Then boiled rice is added over the cooked chicken and saffron is sprinkled over the rice. Then the pan is covered and out n very low flame for 40-45 minutes until rice and chicken are perfectly mixed and cooked together. Arabic Chicken Biryani recipe is an Arabic style rice dish which is less spiced and has a strong flavour of whole spices, saffron and cardamoms. Whole Chicken (cut into 8 pieces): 1200 grams
Water: 8 cups or 2 liters
Limes: 2 dried
Knorr Chicken Cubes: 2 pcs
Basmati Rice: 2½ cups or 500 grams (washed and drained)
Ghee: 2 tbsp
Onions: 3 medium (sliced)
Yogurt: 1 cup or 250 grams
Black Pepper Powder: ¾ tsp
Ground Cumin: ¾ tsp
Ground Coriander: ¾ tsp
Ground Turmeric: ¾ tsp
Ground Cardamom: ¾ tsp
Ground Cinnamon: ¾ tsp
Garlic Cloves: 3 crushed
Ground Saffron: 1 tsp (soaked in ¼ cup hot water)
How to make Arabic Chicken Biryani
METHOD:
1. Add chicken and water to a large saucepan, boil and remove the froth as it appears.
2. Add dried limes and Knorr chicken cubes. Cover the pan and simmer over low heat for around 40 minutes or until chicken is fully tender.
3. Now remove chicken pieces from the stock, add rice to the chicken stock (around 6 cups or 1500 ml) and boil the rice for 10 minutes or until it is nearly cooked. Drain the water and place rice aside.
4. Heat ghee in another large pan, add onions and cook stirring for 5 to 7 minutes or until they turn golden brown in color.
5. Add cooked chicken pieces to onions and stir to mix them well.
6. Combine yogurt with spices and garlic cloves and pour onto the chicken.
7. Add half of the rice to the chicken in the pan.
8. Sprinkle half quantity of saffron water over the rice, put remaining half rice across the pan and then sprinkle rest of the saffron water.
9. Cover the pan and cook over low flame for around 39 minutes or until rice is fully cooked.
10. Arabic chicken biryani is ready.
11. Dish out on a large serving dish, garnish with fried nuts and serve.

Arabic chicken biryani is quite flavourful. I garnished it with brown onions for a nice flavour.
What a great, easy meal. I used chicken thigh fillets, so didn't cook the chicken for 30 mins before adding everything else. Worked perfectly & the result was nice and tender.
