• 8 oz. Patna or Basmati RIce
• ¾ pint (U.S 2 Cups) Water, Salted
• 2 Large Onions
• 4 oz Carrots
• 1 Small aborigine
• 1 green pepper
• 2 ripe Tomatoes
• 8 oz. Cauliflower
Oil for shallow frying
• 6 oz. Shelled peas
• ¼ Teaspoon Garam masala
• ¼ Teaspoon Saffron, Crushed
• ¼ Teaspoon chili powder
• 4 Cloves
• 1-inch Piece Cinnamon
Salt to taste


How to make Mixed Vegetable Pulao (Sabzi Pulao)



1. Wash the rice thoroughly under cold running water until the water runs clear.
2. Cover the rice with the water and par-boil. Drain and set aside.
3. Slice the onions, Carrots, aubergine and green pepper; quarter the tomatoes and simmer on a low heat for 15minutes. Add the aubergine, green pepper, tomatoes, Cauliflower, garam masala, Saffron, chilli powder, cloves & cinnamon.
4. Simmer for another 15 minutes or until all the vegetable are cooked. Season with salt.
5. Using a large casserole dish cover the bottom with half the cooked vegetables, then a layer of half the rice another layer of vegetable and rice topped with a last layer of vegetables.
6. Cover with foil and bake in a moderate oven (350 F Gas Mark 4) for 20 minutes.

How to Make Vegetable Pulao Recipe (Summarized Method):

  • Wash rice with cold tap water.
  • Submerge rice in water in a pan and parboil. Drain water and place at a side.
  • Cut carrots, green chillies, onions and aubergine into thin slices and tomatoes in quarter and simmer for 15 minutes at low flame.
  • Mix aubergine, green chillies, tomatoes cauliflower, all-spice powder, saffron, chilli powder, cloves and cinnamon in the pan.
  • Simmer more until all vegetables are cooked and tender. Add salt.
  • Layer half of the cooked vegetables, then half the rice, then some vegetables, then remaining half rice and finally remaining vegetables.
  • Cover the pan with aluminum foil and bake in gas oven at 350 fahrenheit for 20 minutes.
  • Mixed vegetable pulao is ready to serve. Enjoy with raita, salad and chutney.


Mixed Veggie Pulao is eagerly eaten in Pakistan, Bangladesh and India. Recipe starts from boiling rice, preparing the vegetables and spices and then mixing all and cooking. Recipe does not use very high amount of spices but slightly spiced rice and vegetables. Dish gathers peas, carrots, onions, tomatoes, cauliflowers and rice.
