500g rocket, washed and spin dried
100g pumpkin, cut into small cubes
50g feta cheese, cubed
1/8 cup pine nuts
Fresh ground pepper
Fresh ground sea salt
Olive oil
Dressing:
1/2 cup olive oil
1/3 cup balsamic vinegar
1 tbsp mustard
2 tbsp honey (depending how sweet you like your dressing)
Fresh ground sea salt
Fresh ground pepper

How to make Roasted Pumpkin and Rocket Salad with Feta Cheese and Pine Nuts

METHOD:

Pre-heat oven at 200 degree C. In a baking sheet, drizzle some olive oil, add the pumpkin cubes, season with salt and pepper and drizzle some more olive oil on top.

Roast in the oven for 20 minutes

To prepare the dressing, mix all the ingredients and taste to make sure that the flavours suite your taste. Keep on the side
