How to Make Sheer Khurma Recipe

Sheer khurma is a traditional Pakistani sweet usually served on Eid ul Fitr, Eid ul Adha and sometimes other family happy gatherings. I myself have prepared it many times on Eid and also when my kids requested me for it. I have noted that when I serve it to guests, they like to have it even they tell me that they are coming to eat sheer khorma of my hand and I smile and welcome them. After reading the recipe, you can do this too!

The term 'Sheer Khurma' (also written as Sheer Khorma) means milk with dates. It is a celebratory vermicelli sweet served on days in Muslim community in Pakistan, India and Bangladesh. Most people eat it as breakfast after Eid prayer and then it is placed on dining table for guests.

soak dry dates for half hour in water and then cut into thin slices


slice almonds and pistachios


boil milk add sugar and thick cardamom in boiled milk and cook for 15 minutes at low heat


heat oil in pan, add cardamoms and let it crackle


add almonds, pistachios and dry dates and fry


add vermicelli and fry for 2 to 3 minutes and then add coconuts


add vermicellis in sugared milk and cook for 5 to 7 minutes at low heat

Preparing a Sheer Khurma

Ingredients:

  • Vermicelli: 1 packet (make pieces)

  • Milk: 1 Liter

  • Sugar: 1 cup / as needed

  • Dry Dates: 5 to 6 (sliced)

  • Almonds: as required (chopped)

  • Pistachios: as required (chopped)

  • Green cardamoms: 5 to 6

  • Crushed Coconut: 2 to 3 tablespoons

  • Oil: 5 to 6 tablespoons

For Garnishing:

  • Almonds: as required (chopped)

  • Pistachios: as required (chopped)

Method

  1. Soak dry dates in water for half to one hour. Make thin slices when they are soft enough, also chop almonds and pistachios.
  2. Boil milk in a pan. When boiled, add sugar, green cardamoms (2 to 3) and cook for 15 minutes on low heat.
  3. Heat oil in pan for 2 to 3 minutes and crackle cardamoms. Add almonds, pistachios and dry dates until golden fry. Add vermicelli and fry for 2 to 3 minutes; add crushed coconut. Keep stirring the ladle otherwise vermicelli will burn.
  4. Sheer Khorma is ready.

PRESENTATION:

Chop almonds and pistachios and fry. Sprinkle and serve.


NOTE:

  • If you don't like more vermicelli in milk, use half packet and store rest of it in an airtight shopper or container. When you want to cook again, fried vermicellis would be ready to use. Just boil milk and add it. It will be cooked fast.

  • In summers, sheer khurma gets stale fast so cook as much as you need. Fried vermicellies can be cooked again quickly.

  • You can also use khoya while preparing vermicelli milk.
