Shahi Koftay or Shahjahani Koftay is probably an old Indian dish of the Mughal era as its name suggests. It is quite different with standard kofta recipe, in terms of shape, material and ingredients. Shahjahani kofta recipe uses minced chicken meat, some green vegetables, and cream in the gravy which makes its more appealing to eat. Mix all ingredients of koftas in mince and grind well.
Store in refrigerator.


Prepare small oval shaped koftas and store in fridge again until you prepare gravy.


Heat oil in a large size saucepan and add all spice powder. When it crackles, add onions and fry to golden brown. Add ginger, garlic, salt, white cumin and yogurt and cook for 2 to 3 minutes.


Add koftas in pan and cook until oil becomes visible.


Add milk, when simmers, add cream and stir pan with a cloth.


Sprinkle green chili, green coriander, all spice powder and cook for 5 to 7 minutes at low heat (dam)


Delicious Shahajahani Koftay are ready to serve.

How to Prepare Shahi Kofta

Ingredients:

  • Chicken Mince: 1 kg
  • Ground Ginger Garlic: 1 tablespoon
  • Salt: as per taste
  • Ground White Chili: 1 tablespoon
  • Crushed Coconut: 2 tablespoons
  • Green Chili: 4 to 6
  • Green Coriander: 1/2 bunch
  • Almonds: 4 tablespoons
  • Pistachios: 4 tablespoons
  • Raisins: 4 tablespoon
  • Bread Slices: 2 pcs

For Garnishing:

  • Fresh Cream: 1/2 cup
  • Peeled Almonds: 8 to 10
  • Gravy Ingredients:

    • Thin Chopped Onion: 2 medium
    • Crushed Ginger Garlic: 1 teaspoon
    • Salt: as per taste
    • White Ground Chili: 1 teaspoon
    • White Cumin: 1 teaspoon
    • Whole All Spice (Sabut Garam Masala): 1 tablespoon
    • Milk: 2 cups
    • Yogurt (Beaten): 1 cup
    • Fresh Cream: 1/2 cup
    • All Spice Powder (Pisa Garam Masala): 1 tablespoon
    • Green Chili: 3 to 4 (thin chopped)
    • Green Coriander: Half Bunch (thin chopped)
    • Cooking Oil: 1/2 cup

     

    Method


    For Koftas:

    TIP:
    Do not overcook chicken koftas otherwise they will become harsh and inedible.
