دم پخت ملائی مرغ مکھنی

اجزاء:
مرغی (سالم لیں) ----- ایک عدد (بڑی)
دہی ----- دو کپ
کریم ----- آدھا کپ
پیاز ----- چار عدد (بڑی)
لہسن کے جوے ------ دس عدد
گرم مصالحہ پاؤڈر ----- آدھا چائے کا چمچ
زیرہ پاؤڈر ----- ایک چائے کا چمچ
دھنیا پاؤڈر ----- دو چائے کے چمچ
لال مرچ پاؤڈر ---- ایک چائے کا چمچ
ثابت لال مرچیں ----- چار عدد
چھوٹی الائچی (پیس لیں) ----- چھ عدد
ہری مرچیں ----- چھ عدد
نمک ---- حسب ذائقہ
مکھن (پگھلا ہوا) ---- تین کھانے کے چمچ

ترکیب:

دہی کو ململ کے کپڑے میں باندھ کر لٹکا دیں تاکہ اس کا تمام پانی نتھر جائے- مرغی کے اوپر گہرے کٹ لگا دیں- پیاز٬ لہسن٬ ثابت لال مرچوں اور ہری مرچوں کو اکٹھا گرائنڈ کر کے پیسٹ بنالیں-
دہی میں یہ پیاز پیسٹ٬ نمک٬ لال مرچ پاؤڈر٬ زیرہ پاؤڈر اور دھنیا پاؤڈر مکس کر کے یہ میرینیشن مرغی پر لگائیں اور دو سے تین گھنٹے کے لیے رکھ دیں-
بھاری پیندے والی پتیلی میں مرغی کو ڈال کر اس میں گرم مصالحہ پاؤڈر٬ کریم٬ پسی ہوئی الائچی اور پگھلا ہوا مکھن ڈالیں-
پتیلی کو گندھے ہوئے آٹے سے اچھی طرح بند کر کے ہلکی آنچ پر ڈیڑھ گھنٹے تک پکائیں- ڈھکن کھول کر چیک کریں- اگر پانی ہو تو بغیر ڈھکے پکا کر خشک کرلیں- تیل الگ ہونے پر ملائی مرغ مکھن تیار ہے-
