1 clove garlic
1-inch fresh root ginger
2 green chills butter for frying

½ teaspoon chilli powder
1 teaspoon ground cummin seeds 1 teaspoon pepper
1 teaspoon turmeric powder
2 bay /eaves
Salt to taste
8 duck's eggs, beaten
How to make Spiced Duck Eggs (Duck Eggs Balchow)

METHOD:

1. Mince the onions. Mince garlic, ginger and green chillies finely.

2. Brown onion in a little butter. Add the ground spices and fry for 2-3 minutes.

3. Add all the remaining ingredients except the eggs.

4. Cook gently until the butter floats to the top.

5. Meanwhile, scramble the eggs in butter in a separate pan and add to the onions and spices.

6. Cook for a few minutes and serve with rice or naan.
