2 oz. Patna or Basmati ricc
2 pints (U.S. 5 cups) Milk
4 oz. Sugar
pinch of Salt
1 oz. Raisins
½ Teaspoon grated Nutmeg or
1 Teaspoon Cardamom seeds, crushed

How to make Rice Pudding (Kheer)


Wash the rice thoroughly and put with the milk in a heavy pan and simmer on a low heat for 14 hours. Stir frequently and mash the rice with the back of the spoon. When it is the consistency of thick cream add the sugar, salt and raisins. Cook for a few more minutes till the mixture thickens again to a creamy consistency. Take off the heat and add the flavoring. Serve cold in small bowls.
