Gola Kabab Recipe in English

Ingredients:

  • Minced Meat: 1 kg
  • Crushed Ginger Garlic: 2 tablespoons
  • Chopped Onions: 2 medium
  • Red Chili Powder: 2 tablespoons
  • White Cumin: 1 teaspoon
  • Coriander Seeds: 1 tablespoon
  • Ground All Spice Powder: 2 tablespoons
  • Ground Raw Papaya: 2 tablespoons
  • Yogurt: 1/2 cup
  • Cooking Oil: 1/2 cup

For Garnishing:

  • Onion Rings: as required
  • Lemon Pieces: as required

Method

  1. Add ginger garlic, minced meat, salt, onions, red chili powder, cumin, coriander, all spice powder and raw papaya powder and grind all of them together.
  2. After storing in refrigerator for 2 to 3 hours, add yogurt and 2 tablespoons of cooking oil.
  3. Form round shaped kababs and fry them in a non-stick pan in oil. When they are cooked from one side, revert to cook from other side. They will cook within their own water.
  4. When water is dried, stir the pan holding with a piece of cloth so that kababs do not break and cooked finely from either sides.
  5. Ignite a coal and place among kababs on an onion skin. Drop some oil and cover the pan. Keep covered for 5 to 7 minutes to infuse coal aroma into kababs.

PRESENTATION:

  • Garnish with onion rings and lemon pieces and along raita.
  • To make raita, put a 1/2 teaspoon sugar, 1/4 teaspoon crushed black pepper, 1/2 teaspoon roasted and crushed white cumin and a pinch of salt in a cup of yogurt and then mix well.

 

TIPS:

  • Other than non-stick pan, kababs may be cooked on coal or grill as well.
  • Thread kababs on skewers and cook over coals or on a grill.
  • When they are likely to get cooked, start applying oil on them with a malmal cloth or a tissue paper. Oil makes kabab shiny and better to present.
