Ingredients
Basmati rice ½ kg
Salt ½ tsp
Carrots grated 2 cups
Coconut sliced ½ cup
Raisons ½ cup
Almonds 20 blanched whole
Pistachio blanched 20 whole
Green cardamom 6
Ghee ½ cup
Sugar ½ kg
How to make Punjabi gajar ka zarda

METHOD:

Soak rice for 30 minutes in a pan.
Boil water with ½ tsp salt and then boil rice, then drain and keep aside.
Heat ½ cup ghee add ½ cup water with ½ kg sugar, keep stirring till sugar dissolves completely.
Add boiled rice and mix well.
Cook uncovered on high flame for 10 minutes.
When water dries add grated carrots, mix well, lower flame and leave it on dum for 15 minutes.
Remove in a platter, garnish with nuts, coconut slice and raisons and serve.
