Ingredients

450g small potatoes washed
1 spring onions peeled and thinly sliced
2 hard boiled egg (only white)
1cup mayonnaise
1/2 cup soured cream
1/2 tsp mustered paste
Salt to taste
freshly ground black pepper
175g mortadella sausage in thin strips

How to make Potato & Mortadella Salad

METHOD:

Cook the potatoes cubes in boiling salted water until they are just tender.
Stir the onions into the soured cream stir, mustered paste & mayonnaise and season well with salt & pepper.
Toss the potatoes & hard boiled egg slices in the dressing. Just before serving stir the mortadella carefully into the potato salad. Garnish with green onion & serve on iceberg.
