INGREDIENTS:

1 cup Black beans, bOiled, rinsed and drained
1 cup fresh cooked Corn,
2 red bell peppers, dIced
2 Cloves Garlic, minced
2 Teaspoons Salt
1/4 Teaspoon Cayenne pepper
2 tablespoons Sugar
9 tablespoons extra virgin olive Oil, best quality such as Colavita
1 Teaspoon Lemon zest
6 tablespoons fresh Lemon juIce
1/2 cup chopped fresh cilantro, plus more for garnish
1/2 cup Tomatoes finely chopped, chopped
1/2 cup onion finely chopped
1/2 cup Iceberg Lettuce


How to make Mexican Salad



METHOD:

Combine all the ingredients in a salad bowl. Mix well. Let rest in the fridge until serving.
