کشمش ۔۔۔۔۔۔۔۔۔1/2کپ
ثابت زیرہ ۔۔۔۔۔۔۔۔۔۔1چائے کا چمچہ
کدوکش گاجر ۔۔۔۔۔۔۔۔۔1عدد
کُٹی کالی مرچ ۔۔۔۔۔۔۔۔1چائے کا چمچہ
کٹالہسن ۔۔۔۔۔۔۔۔۔۔2-3جوے
دہی ۔۔۔۔۔۔۔۔۔1کپ
کُٹی الائچی ۔۔۔۔۔۔۔۔۔۔1/2چائے کا چمچہ
دار چینی ۔۔۔۔۔۔۔۔۔2ڈنڈیاں

ترکیب:

500گرام چاولوں کو صاف کرکے 2سے 3گھنٹوں کے لیے پانی میں بھگودیں ۔
ایک پین میں تیل گرم کرکے اس میں 2ڈنڈیاں دار چینی اور 3-4عدد لونگ ڈال کر کڑکڑالیں ۔ اب اس میں پیاز ، 2-3جوے لہسن اور 1/2کلوگائے کا گوشت شامل کرکے اچھی طرح بھون لیں ۔ پھر اس میں 1کپ دہی ، 1چائے کا چمچہ کُٹی کالی مرچ ، 1/2چائے کا چمچہ کُٹی الائچی ، حسب ذائقہ نمک شامل کریں ۔جب آمیزہ خشک ہوجائے اور تیل چھوڑدے تو ایک سے ڈیڑھ جگ پانی شامل کرکے پکنے کے لیے چھوڑ دیں ۔ گوشت گل جائے اور یخنی تیار ہوجائے تو چاول شامل کرلیں ۔
چاول تیار ہوجائیں تو دَم پر لگادیں ۔ اب ایک پین میں 1عدد کدوکش گاجر ، 1/2کپ کشمش ، 1کھانے کا چمچہ چینی اور پانی شامل کرکے 3سے 5منٹ پکائیں ۔ پھر اس آمیزے کو چاول پر ڈال کر سرو کریں ۔ افغانی رائس تیارہے ۔
