50- 0 g (1 lb) Carrots, grated
2 large Oranges
90 g (3 oz/ 1/3 cup) Raisins
60 g (2 0Z/ 1/3 cup) blanched Almonds, lightly toasted
Lime slIces, to garnish
SPICY DRESSING:
2 tablespoons virgin olive Oil
2 tablespoons Lime juIce
1 Teaspoon ground cumin
½ Teaspoon ground Cinnamon
½ Teaspoon caster Sugar


How to make PERSIAN CARROT SALAD



Put carrots into a bowl. Cut peel and pith from oranges. Remove segments and chop. Add to carrots with raisins and almonds.
To make the dressing, mix all the ingredients together in a bowl or screw-top jar. Add to salad. Toss together, then refrigerate for 1 hour. Serve garnished with lime slices.
