Heat olive oil in a non-stick pan. Add garlic, ginger, green chillies and sauté till light brown. Add spinach, salt and cook till the mixture is dry. Transfer into a bowl and allow to cool. Add cheese and mix well. Mix refined flour with sufficient water to make a thick paste. Apply the paste on the sides of spring roll sheets. Place a portion of spinach-cheese filling and roll tightly. Press the edges to seal. Heat sufficient oil in a kadai. Deep-fry the rolls on medium heat till golden brown and crisp. Drain on absorbent paper and serve hot with ketchup.
