Mixed vegetable pickle  Recipe in English is an easy and traditional cooking recipe to prepare at home. It provides you an awesome taste of Achar Recipes.

Carrots, Cabbage, beans, Turnip, Radish - 50 gms each,
Beetroot - 50 gms (optional),
Salt - 1 tsp,
red Chilli powder - 1 1/2 tsp ,
Mustard seeds - 1/2 tsp ,
Fenugreek powder - 1/4 tsp,
Asafoetida - 1/4 tsp, Oil - 1/4 cup.


How to make Mixed vegetable pickle 



1-Cut the vegetables into fine pieces. Add salt and red chilli powder and mix.
2-In two tsps of oils add mustard seeds.
3-when it pops add the fenugreek powder and asafoetida.
4-Add this to the vegetable mix. Heat the remaining oil in the same pan and add it to the vegetables.
5-For the next two days stir and shake well once a day.
6-The same method can be followed for sour apple, guava unripe) or any vegetable which has a sour taste.

Thanks it is nice to utilize mix vegetables to make an achar. Before this, when i had lots of vegetables, I made filling for chicken rolls and mix veg pulao and now this is another option to utilize vegetables. I like achar & this is another option for me.
