Lemon Grass Panna-cotta Recipe

1 cup whole Milk
1 tblsp unflavored powdered gelatin
2 cups Cream
2 tblsp Sugar
for Lemon grass sauce,
2 tblsp finely minced Lemongrass bulb
1 kaffir Lime leaf, shredded fine
1tblsp Lemon juIce
1/3 cup Water
a pinch of colour
Sugar to taste
1tsp Corn starch


How to make Lemon Grass Panna-cotta



Combine the, sugar, water and lime juice in a small, nonreactive saucepan. Bring just to a boil; then, add the lemongrass and the lime leaf and simmer for 30 seconds. Can add a pinch of colour. add cornflour dissolved in water and stir well cook till sauce become thick.
Remove from heat, and place the saucepan in a bowl of ice and water to chill.
Put milk with sugar in a bowl. Sprinkle the gelatin over. Let stand for 3 to 5 minutes to soften the gelatin. Pour milk mixture with a pinch of green apple colour in to a saucepan and stir over medium heat just until the gelatin dissolves but the milk does not boil, about 5 minutes. Remove from the heat & add cream. Mix well and pour into 6 glasses so that they are 1/2 full or pour in small molds. Cool slightly. Refrigerate until set, at least 6 hours.
Spoon the sauce on top of the panna cotta and serve.
