Chicken Korma

Ingredients
1 whole chicken (cleaned)
2 tsps poppy-seeds
10 blanched almonds
2 piece dry coconut
1 tblsp coriander seeds
4 cloves
2 large cardamoms
1" piece cinnamon stick
1 tsp cumin seeds
a large pinch each of nutmeg and mace
6 flakes garlic
2 piece ginger
2 cups curd (beaten)
1 tsp turmeric powder
salt and chilli powder to taste
1/2 cup ghee
3 large onions (minced)
8 green chillies (minced)
1/4 cup thick coconut milk
50 grams cashewnuts (fried 1 handful coriander leaves (chopped)
How to make Chicken Korma

METHOD:

Disjoint the chicken. Grind the poppy-seeds, almonds and coconut to a paste. Powder all the spices together. Also grind the garlic and ginger to a paste. Mix the ginger paste into the curd, along with the turmeric, salt and chilli powder. Mix into the chicken and set aside for 2 hours. Heat the ghee and fry the onions and coconut paste till golden-brown. Add the chicken, along with the curd mixture, green chillies, and all the spices (powdered together). Cover tight and cook till the chicken is almost tender. Now add the coconut milk,and continue cooking till the gravy turns dry. Remove from fire, garnish with fried cashewnuts and fresh coriander leaves

What is Korma food?


While making korma recipe, it would be good to know what actually korma is. So here is some basic description about korma curry.


Korma is a sort of creamy meat dish which is prepared using saffron, cardamom and several other spices. Korma was originated in the kitchens of Mughal emperors of India. 1500 A.D was the first time when korma was cooked by a cook of Mughal King Akbar. It is also believed that korma was a union of Indian and Persian cooking cuisines, introduced by Rajput employees of Jodha (Akbar's wife).


The dish was named originally 'Kurma' after the name of a prominent tribe of Rajputs. The ingredients used in original korma recipe were: mutton, yogurt, cardamom, ginger, black peppercorns and almonds.


Almonds are soaked in wate for whole night, then peeled and crushed which are then added to korma. Turmeric is also used these days in korma recipes however it's not found in the history of royal kitchens.

It is a wonderful thing with a wonderful gravy. I like kormas of all meats but my most favorite one is chicken. I also like chicken stew, chicken jalfrezi and broast. But in gravy dishes, chicken qorma' is the best. and I am learning to cook a perfect one. Soon I will be cooking it myself.
